Arabic Salad
This is a recipe I got from a gal who lived in Jerusalem for a while. Justin absolutely loves it. He wants it a couple times a week. I hate tomatoes, so it is not for me. There are no absolute measurements. You just have to make it according to your taste.
Cut up equal amounts of cucumber and tomato. (Plum tomato works best, but you can use Roma if you can't find Plum.) Cut these into small cubes. The smaller the better. But do not smash them. Dice one clove of garlic very finely. Finely dice small onion, the sweeter the better. Mix together in a small bowl, juice of one lemon, (Must use fresh lemon. We tried it with the bottled lemon juice because Justin was desperate and he said it wasn't as good.) olive oil, ( I don't know how much, enough to just cover the veggies when mixed with lemon juice) and garlic. Carefully mix together cucumber and tomato and pour lemon juice mixture over it. Toss gently. Add salt and pepper to taste.
Super simple recipe, but great for the summer!

Paul would love this salad! I have Paige pick up her room. I also spray windex on the fridge, stove and dishwasher and she wipes it off. I have her set the table(she loves to do it) and I have her help me dust(I spray, she wipes). Of course when she is done and not in the room, I usually go back over it again. She also loves to help fold laundry. I let her fold her clothes because it is more manageable for her and then I don't care how they are folded!
